The Cider House – Part 2: Apple Season

By October, the apple trees were heavy and the whole valley smelled of sweet fermentation.

They pressed the first batch together in the old stone mill, with the great wooden press that groaned like an old ship. Juice ran golden into oak barrels. Rosa's hands were sticky to the elbow and she was entirely happy.

On the first night of the tasting, they sat on the terrace above the valley with a small lantern between them. Alejandro poured the first glass from a great height, perfectly, and held it out.

"To the new owner."

She drank. It was bright and dry, tart and honeyed and alive.

"Alejandro," she said, wonderingly. "It's wonderful."

"It is yours. I only helped."

She set the glass down. Mist was rising from the valley. Somewhere a cowbell clanked, and a late swallow wheeled across the dusk.

"Can I ask you something?" said Rosa.

"Yes."

"Do you think it is too late to begin things?"

He took off his cap and turned it in his hands. "I began this cider at twenty. I began again at fifty when my wife died. I think," said Alejandro slowly, "that beginning is the only thing that is always possible."

"Then may I begin something?" said Rosa. "May I kiss you?"

"Yes," he said, very quietly. "And if you say stop, you must pour for the whole village, from the roof."

"That is a terrible punishment."

"I would help."

She kissed him, softly, a hand against his rough cheek, tasting apple and warmth. He kissed her back with a tender, careful gravity. The lantern burned low between them and the mist rose silver from the valley.

When they parted, both of them were smiling.

"Green?" asked Alejandro.

"Green," said Rosa. "Very green."

The next spring, the sign above the door was repainted: Llagar Rosa y Alejandro. Cider poured properly.
